Fall Soup Recipe

Halloween is just about here. Ghosts and goblins will be everywhere. Fall season is a good time to make changes in your diet. You should start eating more legumes, root vegetables, things like squash, pumpkin, sweet potato and warming soups.

Here’s a great root vegetable soup recipe for the season:

Get two sweet potatoes, a small pumpkin and a butternut squash. Cut the squash and the pumpkin in half and deseed them. Put the sweet potato, pumpkin and squash in the oven at 350 degrees for one hour or until soft. Once cooked, scoop the meat out of all the roasted veggies and put them in a high-power blender. Add ½ a cup of coconut cream and 8 oz. of coconut water. Season with pumpkin pie spice, cinnamon and blend until creamy. Serve in a bowl and garnish with pomegranate seeds or dried cranberries.
